Because I was watching a documentary about OJ Simpson, and it turns out he couldn't even catch a ball, so what they did was literally hand the ball directly to him (rather than throw it to him), then he'd just run with it to score a TD every time. Because he was extremely quick, no one could stop him, so that's how he became widely regarded as the greatest NFL player of all time, despite having absolutely no skill (besides being able to run quickly).
So why don't NFL teams just hire the 8 100m Olympic finalists every 4 years?

The NFL has tried it, doesn't work. Speed means nothing it you can't make cuts or catch the ball.

The same principle was tried in baseball once. The Oakland A's signed sprinter Herb Washington to be the "designated runner". A player would get on 1st (Washington never batted) and ol' Herbie would just steal the other three bases. But, once again, raw speed doesn't equal skill.
It would take years for Bolt to get the feel of American Football. If you were to just give him a helmet and throw him into the game, defensive backs would eat him alive.
And OJ isn't the best NFL player of all time, He isn't even the best RB of all time. Great, but not best.

How do you explain Forrest Gump then? I know it is fictional, but it is kind of a realistic true to life kinda film, and I don't remember anyone saying "that's unrealistic" or "that should have been cut from the film".

I know it is fictional, but it is kind of a realistic true to life kinda film, and I don't remember anyone saying "that's unrealistic" or "that should have been cut from the film". Didn't he play for 'Bama? Southern University. Hillbilly and redneck. Hey - I love the competition and the conference - pageantry is great and unrivaled IMO - but.......... Life is a little sloowwwwerrr down there
