This morning we started a roast beef with carrots, onions, potatoes and cabbage in our slow cooker. It smells great. Any of you use a slow cooker or crock-pot? And if you do what is your favorite thing to make in it?

Yep. Pretty much beef pot roasts, although I don't add the vegetables like you were talking about. I might add a little bit of chopped celery (especially the leafy end), and some crushed garlic cloves, but generally don't add vegetables.
I have also cooked some ribs in the crock pot, but mainly prefer to do those in the oven.

Corned Beef works very.
Like Zolo, I cook the veggies separately and add them to the slow cooker just before serving to meld the flavors. The Veggies tend to get too mushy overnight and don't cook enough if added in the morning.
Pork Roast is GREAT as a long time cooking meal. Again. Veggies later!

Thanks for mentioning pork roast in a slow cooker. I've been meaning to try that. I'd definitely spike it with a few extra cloves of garlic, and let it slow-cook overnight. Yum.

ZolotoyRetrieverI don't remember the name of it exactly BUT there is a recipe for a Puerto Rican Pork Roast with lots of assorted spices = most of which I didn't have so I substituted assorted other things like cajun spice and cumin and GARLIC ! Cooked overnight (plus) until it was totally falling apart. With Rice ! DROOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOL ('scuse me ) Man was that ever good ! Too bad I didn't write down what all I used so I could cook it again !

First let me say that roast beef was outstanding. It was so tender it was hard to get out of the slow cooker without falling apart. I do disagree with you and ZolotoyRetriever about the vegetables. We always cook them in the slow cooker with the roast beef and they always turn out very good. You mentioned Pork roast. If you like onions you should try this. 4 pound pork roast One clove garlic (slivered) 2 or 3 large onions (sliced) 1 whole clove 1 tablespoon soy sauce Salt and pepper 1/2 cup hot water Rub roast with Salt and pepper. Make small slits in roast and insert slivers of garlic. Put 2 slices of onion in bottom of slow cooker or crock pot. Add pork roast and rest of onions and other ingredients. Cover and cook on low 11 or 12 hours.

With the cabbage on top of that beef roast it smelled so good when I would be outside then come in the house. Could hardly wait to eat it but it was definitely worth the wait.

...beef stew...lean beef chunks, sliced carrots, chopped celery, diced potatoes, pearl onions, sliced mushrooms, spices (your choice) in beef broth simmered for 8 hours...

Just made my best beef stew.
This one had half an eggplant. I sear/brown nearly everything before it goes in. Maybe half a jar of dried ghost peppers was jusssst a bit much.
Prepped it all before bed (well over an hour) and cooked it 9 hours. Smell still wafted through closed door.

Maple Apple Compote 1.5 lbs. baking apples (I used Granny Smith), cored and sliced 1/4 C maple syrup 1/2-1 t ground cinnamon 1 t vanilla extract Place apple slices in slow cooker and toss with cinnamon to coat. Pour maple syrup over slices and cook for 2-4 hours on low, until apples are soft. Gently stir in vanilla. Serve immediately or store covered in fridge for up to 4 days.
