Traditionally Christmas and New Year's Eve dinners are just as important, if not more so, as the next day's holiday lunches.
What's definitely NOT going to be eaten on Christmas Eve at any point is meat. Fish and seafood.

It's my turn, this year, and there will be four of us. We decided on roast beef, but will do a cross-rib, rather than a rib-roast. We'll make it a little oversized, and that will be much easier to divide into leftovers.
I've assigned salad, veggie side-dish and early "nibbles," so I can't be more specific. I'll do mashed potatoes -- mine are (usually) great, and they're a pain to have to transport to another person's house.
None of us is a big dessert eater. I'll have ice-cream/toppings. If anyone wants to bring something else, OK.
It looks like the Dungeness crab harvest will disappoint, again, this year. It's a big Christmas/Christmas-Eve tradition. The season started off as scheduled. However, the crabs have much less meat than usual, on them. The industry has been holding off from continuing the harvest, in hopes that some extra time will "fatten" them. People don't want to pay for scrawny crabs, so it isn't worth the time/effort for the fishermen.

Generally, go to get Chinese for lunch, and dinner's maybe leftovers.

despite the fact that we are invited and going to two different dinners one with ham and turkey, the other turkey and prime rib, both with a whole bunch of sides the mrs insists on getting up early and doing a ham, candied sweet potatoes and greens considering we'll bring a lot of stuff from the two dinners we'll end up with a fridge so overstuffed with food closing the door will be an issue she'll probably make a bunch of platters the next couple days and hand them out to random homeless

Lasagna(I am making mi mama's), turkey, two different stuffings, as my brothers decided to challenge who will make the better one. Minestrone, Caesar salad, another vegetable. Cheese/crackers, more cheese as we are Wisconites. And I of course will provide the desserts(cookie variety, Buche de noel, bars, truffles). More cheese.

Carnivorous fools! Is it only humans that are "supposedly" subject to man's goodwill, just not the animals. Lets wantonly and violently have them killed and slaughtered, to appease our own gluttony and greed and all because we are pigs. Oh, that is an insult to pigs.

My parents are real traditionalists, so there'll be a lot of the standard stuff: turkey, mashed potatoes, vegetable dishes, stuffing, etc.
