So let's have a proper poll then!
There's plenty missed out, because there are literally hundreds if not thousands of species named in Trek. But here's most of the major races.

Thanks for making this poll! Most people will probably say Klingons or Vulcans, but I always found Andorians to be the most interesting and with the coolest look. Talosians are really awesome too, despite only appearing in the pilot episode of the original series.

Tholians, The Q, Founders. I like the non-humanoid/non-corporeal races in Star Trek. It really breaks the norm.

That's one reason I like the original series novels. The crew is a good bit more diverse than it was in the show, with some real non-human folks around.
My favourite is the Sulamid - "between two and three meters tall and resembles a bundle of tentacles, constantly moving and changing color. At the top of bundle are eight stalked eyes with triangular pupils. They possess octocameral brains, with eight separate personalities. They have a mouth hidden inside their many tentacles, with sharp teeth. The species is composed of twelve genders, all of whom insist they're male, especially the ones that bear children."
I've never even managed to find a fan-drawn artist's impression of them, alas.
