I am guessing most will say with ketchup. I to like them that way but here is my favorite way I like them.  Loaded with gravy. There is a restaurant we go to and I usually get this. Most people get it with mashed potatoes.  Now I want to go to that restaurant! LOL

With gravy is good. Most places don't offer it, but when I find the rare one that does, I always get it.
On average, though, I prefer my fries dipped in ranch.

Yeah, I suppose any place that offers beef gravy as a menu option would allow for a made-to-order switch like that. The problem is that I don't ever order entrees with beef gravy and it just seems like half the time when you say to a waiter or waitress, "hey, I can see here that you offer beef gravy elsewhere on your menu, howsabout I get some on my fries," they start panicking and saying they don't know what to charge for it, they're not sure it's allowed, they have to ask a manager, etc." and I don't like stressing waitstaff out. They don't make much. So I just wait until that once-a-year situation where I'm in a restaurant and I see "fries w/gravy" actually on the printed menu and then I go for it. Once a year is good enough for me.

I have not had french fries in a long time. But mainly because the way I like them is loaded with fat & calories. Either loaded with real cheese, or mayo & horseradish.

...twice fried...and there is a fry joint in the French Market in downtown Chicago who double fries 'em, and also offers 26 different dipping sauces. I tried their peanut sauce and it was fantastic.
When I was stationed in Europe, I found it strange that they loved their fries with mayo...

Salty. And I dip them because I don't want soggy fries. I usually dip them in ketchup or mustard or bbq sauce or melted cheese. I'd probably dip them in gravy, too. I've just never tried it.

If you live in a nearby state or the same state I can give you directions on how to get there. You won't be disappointed with their food. Especially their roast beef sandwich.

Home made, thick cut from freshly peeled Sebago potatoes deep fried in rice bran oil because it has the right 'smoke point' and temp for getting crisp chips, well drained and with a light dusting of milled sea salt.

I hate soggy fries, so I wouldn’t dump gravy on them. As long as the fries are hot and fresh, I don’t really need anything on them. However, I will dip them in ketchup or malt vinegar.
