We just had this and it was great. A beef roast in crock-pot. A little different than we usually make. Instead of pealed white potatoes we used red potatoes unpeeled. We usually top it off with cabbage. This time we topped it off with Hunts diced fire roasted tomatoes. Here is what you need 1 large onion, halved, thinly sliced 1 lb small red potatoes, cut into quarters 1 bag (12 oz) ready-to-eat baby-cut carrots 1 tablespoon chopped garlic**** (see below) 1 boneless beef pot roast (2 1/2 to 3 lb) salt and pepper 1 can Hunts diced fire roasted tomatoes.**** (see below) Arrange onion, potatoes, carrots and garlic in bottom of slow cooker. Place beef over vegetables. Sprinkle with salt and pepper. Pour tomatoes over beef and vegetables. Cover; cook on High heat setting 4 to 5 hours, or Low heat setting 6 to 8 hours. Serve beef and vegetables with sauce. Garnish with parsley if desired. The fire roasted tomatoes were so good the next time we make it we are going to add two cans. Plus in the first picture is what we used. Next time we are going to use what you see in the second picture and leave out the 1 tablespoon chopped garlic.

I love cooking in my crock pot...especially different versions of beef stew with different ingredients...,
