Cary Grant in Arsenic and Old Lace. He hated his performance, but it was great and perfectly fit in with the frenetic black humor.

Alan Rickman as the Sheriff of Nottingham in Robin Hood: Prince of Thieves. Underrated movie but Rickman plays a role just as good as Hans Gruber in Die Hard, and the opposite character too. While Gruber is cold and methodical while the Sheriff is hot-tempered and manic.

Cary Grant hammed it up quite a bit in Gunga Din, but I loved his performance. Same with Cagney in Yankee Doodle Dandy.

Jack Palance in... just about everything. He's easily my favorite "overactor" of all time. Tim Burton's Batman is a well-known role - his every scene with Jack Nicholson is just gold. Craze, quite forgotten mid-70s British horror, would be a personal favorite. The title fits Palance's acting style perfectly.
I have a lot of appreciation for overacting in general. Kubrick's movies are full of underacting and overacting since he intentionally directed his actors that way, and that resulted in some of the most iconic characters and roles in all popular culture.
I don't get way some people complain about acting, storylines and so forth not being 100% realistic. Arts are never "real" in a way the word is commonly understood. If you want pure "realism", just stare out of the window.
