I think they are all the same. What matters is how it is cooked. I have found that the best way to do bacon is in the microwave. Just between crisp and burned is right for me.

What matters to me most is how it's cooked. I like it almost-burnt to just plain old burnt. It shouldn't be floppy or flexible at all. If you try to bend it, it should break instead. It should rather be kind of crumbly.
Needless to say, it's just about impossible for me to get a restaurant to cook bacon now I like it.
At that, I'll eat it cooked different than I prefer it.

I want the wild boar, but it's $16 a pound plus shipping. Not even a pound. That one is super lean looking but after shipping it's probably $20 for 8 oz!! Those bacon steaks (whatever that means) will set you back $60 for a pound!!! Also they are both probably delicious and you would want to order them again. It's like crack.......at least what I imagine crack would be like.
