Easter is 2 weeks away and I bet a lot of you will be making hard boiled eggs. You should pickle some of them. I made these four days ago and they turned out great. 12 hard boiled eggs. 1 qt sliced beets 1 1/2 cup cider vinegar 1 tsp. salt 1 onion sliced 1 1/2 cups of sugar 4 cloves Place eggs in large glass jar. Combine all other ingredients in saucepan. Bring to a boil. Turn down heat and simmer for about 5 minutes. Pour over eggs. When cool put in refrigerator. Ready in 3 or 4 days. I stir them a couple times before they are ready to eat. The beets are so good I eat them also. If you feed a lot of people or are having a party just double the eggs and ingredients.

I recall having a pickled egg, several years ago. It didn't appeal to me ... although, I have no idea if the recipe is, at all, similar to the one that you posted.
I do like beets, and the combination of flavors in the rest of the recipe. Perhaps, I'll find something else that would be well-brined in that mixture.

This is the way we make Easter eggs at my house. I made them to have some over Easter but they were so good I ate them all. LOL Have to make another dozen.
