My mom used to make stuffed peppers with ground lamb. So being from WI this sounds even more delish!

Mmmm ... that does sound good.
I might try it with a little milder pepper, maybe a Poblano. I don't dislike Jalapenos, for heat or flavor when I eat them, but there is an after-taste that lingers for too long.

I don't know about anybody else, but I'm not a 'dip' kind of guy, and won't even bother with that part of it when I try this (and as far as I'm concerned, that 'prep' video seems to indicate a decided need for just a BIT more cheese!
