The first, by far.
I used to be one of those that thought the 2nd was the pinnacle of the series, but having revisited it recently, I'm not sure it holds up very well. I may have to go back and re-visit the rest of the series and see if my opinion on those has changed.
I always felt like the 3rd one was unjustly hated. Flawed, yes, but very well-crafted (and as mentioned before, Mary Elizabeth Winstead makes the film). 5 was surprisingly solid, while all copies of 4 could disappear off the face of the Earth forever and no one would know the difference.
