What are some good film series (if you can call tham that) which consisted of only the original film and a sole sequel?
Hardly great, but I didn't mind the two Charlie's Angels films.
Note: Kill Bill doesn't count.

I agree with @snakeeyes43 about the Rescuers and National Treasure films; hey, National Treasure is a lot of goofy fun, a virtue in its own right!  Speaking of goofy fun, I rather liked both Almighty pictures: Bruce and Evan. The second is, surprisingly, a crypto-remake of Mr. Smith Goes to Washington. And some more goofy fun: Count Yorga and its sequel, Davy Crockett and its sequel. Many people like Abbott and Costello’s Buck Privates and its single sequel, Buck Privates Come Home, but I’ve never been a big Bud and Lou fan, especially in the movies (they’re much funnier in their TV show). Oddly enough, like Evan Almighty, Come Home is a crypto-remake, this time of Laurel and Hardy’s [far funnier, in my opinion] Pack Up Your Troubles (’31). And how can I forget Cat People and its sorta-kinda-sequel, Curse of the Cat People? I actually prefer the latter. And, of course, Derek Flint! EDIT: I forgot an even more obvious duo— Going My Way and The Bells of St. Mary’s.

I won't say this is a good/great series, but there is The Odd Couple and The Odd Couple II (30 year gap between films).
Matthau and Lemmon also had Grumpy Old Men and Grumpier Old Men.
Magic Mike and Magic Mike XXL (though not many will say it's a good/great series).
Tales From The Crypt: Demon Knight and Tales From The Crypt: Bordello of Blood (Ritual doesn't really count as a TFTC film).

Let's not forget the Richard Chamberlain and Sharon Stone attempt to cash in on the Indiana Jones craze...
King Solomon's Mines Allan Quatermain and the Lost City of Gold
Hardly classics but they remain pretty goofy, semi-solid adventure films.
