Personally , I find the ones that aren't realistic are the funnest, like rad racer, outrun, and F zero, and even ridge racer even though that one I never played. But things like gran Turismo are not that fun.

I remember in one of the Gran Turismo games you could make a Supra that could literally fly.

I am more of the opposite overall. because if I am going to name only one racing game series as my overall #1 it's definitely the Forza series which are sim racers basically. basically Gran Turismo series used to be my #1 (as I played some on PS1/PS2) until I played the first Forza game on original XBox in 2005 and at that point I could not go back to Gran Turismo series. in fact, I recently been playing Forza 7 on PC (the damn thing takes up 104GB of space!).
I play the Forza series with all assists off which makes it more fun/challenging since you have to focus more on driving or you could lose control if you really hammer the gas on higher powered cars around turns etc. but I can see for someone who's not into racing games much, will probably prefer those more simple racing games since they don't require as much skill to be fairly good at. like they are easier for a random person to play than a sim racer and sort of that 'easier to pick-up-and-play' sorta thing for some quick action with random people.
but in terms of the more arcade style racing games... I liked some of the Need for Speed series years ago as off the top of my head I think Need for Speed: Most Wanted (2005) (on original XBox) is the one I enjoyed the most is semi-recent memory (say last 10-15 years). I believe I did play that on XBox360 to at a later date just for the noticeably improved graphics.
p.s. but putting aside racing games in fairly recent memory... Wave Race (1996) on N64 is one of my all-time favorite N64 games and I still like firing that up occasionally to this day (but on emulator of course and not the real system as I sold my original system I had since 1996-1997 back around 2001 to someone I worked with at the time). the next version on Gamecube, Wave Race: Blue Storm (2001), was not as enjoyable to play as that was disappointing.

This reminds me. I still need to beat Rad Racer. I've reached the last race without the continue cheat but I've never legit beat the thing from beginning to end.
I loved the first Gran Turismo even though I never beat that one either. I never got into the sequels.
Outrun 2006 Coast 2 Coast for PS2 was a good time.
I've also played a lot of Asphalt 8 on the PC.

I don't care for them particularly because I've never been into cars but I've had some fun playing some of these more open world driving games like Burnout Paradise and Need for the Speed Hot Pursuit.
That The Crew game looks interesting. I wouldn't buy it but I'd download it if it came to PS Plus.
