Sophie Turner gave some insight and info on her last scene on game of thrones season 8 her final scene took 5 days to shoot and it was in Spain making her co workers sweaty and bored lol she said she was crying was very emotional
so it appears Sansa doesn't end up in winterfell after all but somewhere sunny and where they usual film dorne and Kings landing scenes .

I have always believed that Sansa will survive. I wouldn't even mind her in gloomy Winterfell. I remember this dialogue of Lady Stark from episode 1.
Even after all these years, Ned, I feel an outsider here.(Referring to Winterfell and Godswood) Sansa took over her mother and initially she was a Tully. But her experiences finally made her a true Stark. And I want her to remain a Stark. That's what she was meant to be. She may have shot her last scene in another place but that could be because of other reasons. I think she will remain the Lady of Winterfell.

That's why they made her "Lady of Winterfell" to begin with. If Jon survives then he will be the ruler of 7 kingdoms and Sansa the Warden of North. Even if he doesn't survive and unified kingdom ceases to exist then also Sansa will rule over Winterfell (and North).

"I wrapped shooting in spain-like , the whole of Game of thrones" turner explained. "But i remember the first time when i wrapped in belfast with the crew that we worked with so often , it was in the winterfell courtyard. "I wasnt even shooting there , but the director david nutter , called me into the courtyard, because he knew it was my last day on set. He said to the whole crew , 'sansa stark is leaving winterfell for the last time '. "As you can imagine i bawled my eyes out" "Then david and dan presented each other with their favorite scene of their character in a storyboard, with a little note on the back. That set me off as well . As soon as they brought that out... and the documentary crew saw me.It was just bawling. "Its very emotional. But we keep delaying our goodbyes. We keep going , 'we"ll see you at the wrap party. Its fine. And then were like ' Well we say bye now. We'll say bye at the premiere'. 'We wont say bye then.
