I've only read two, plus the excellent Frederick Forsyth short story about weapons smuggling.
Soldiers and Innocents - Russell Celyn Jones. Heard some of it read on BBC Radio 4 and it's a testament to the difference a great narrator can make, because the prose sounded wonderful, and made me want to read the book. Years later I did and wasn't even sure where the passage I heard appeared. The writing seemed average and the story dull.
Lies of Silence - Brian Moore. A man is ordered by the IRA to plant a bomb at a hotel. Either scores of people are killed, or his wife will be killed if he doesn't go through with it. Really liked it, although I don't remember much about it now, some twenty years after reading it.

Adrian McKinty's Sean Duffy novels. The first two The Cold Cold Ground and I Hear The Sirens In The Street are okay, but the series really picks up speed with the third book In The Morning I'll Be Gone. They have compelling period detail, great prose, a convincing protagonist and a healthy amount of black humor.

Troubles, a 1970 novel by J. G. Farrell. It's set during the time of the Irish War of Independence, with a dilapidated resort hotel and eccentric family standing in symbolically for the social and economic breakdowns wrought by the upheval. An excellent read, and was also made into an excellent multi-part British television drama in 1988.

Not strictly "The Troubles", but Roddy Doyle's A Star Called Henry is set around the Easter Rising, and gives a pretty good oversight into the characters and motivations of the players in 1916, whence The Troubles eventually emerge. I loved that book. The sequel, Oh Play That Thing shoe-horns Henry into New Orleans and the world of Louis Armstrong, and is the worst sequel ever made, including Police Academy 6 and Friday 13th Part 9.
