I don't think we're supposed to question their ages at this point. They just expect us to go with it because it's a comic book movie. They never cared about even a shred of continuity, so why expect them to start now?
Seriously, would giving Fassbender some gray hair been that hard for them? He's 30 years older than he was in First Class, which would have given them a perfect excuse to make his character resemble his comic book character.

A Fassbender with gray hair would have gone a long way to making him look more in line with the Magneto that we know. I mean, they already shaved Xavier's head, why not make Erik's hair gray?

Not by decades, or even a couple of years. Try a year and a few months at the most, as the Twin Towers are still standing in NYC in X1.

Yes, and considering that the movies try to make effort to accurately represent the times instead of totally re-writing all major history they are set in it makes sense that the events of X-1 take place in late 2000/early to mid 2001. I don't think the timeline even matters anymore. Especially when Banshee dies before the timeline reset so Siryn is a clone/X-23 of Banshee? Angel is older than he should be. Meaning he was born before 1973. Same with Jubilee and Psylocke. If they were smart they would have explained time as a lake instead of a river. Throwing that stone in the water would have ripple effect in all directions. That way they can have an explanation for characters being different. And blame Kitty and Bishop for all the changes caused by their multiple time jumps.
