Anne Rice's "The Witching Hour" definitely needs to be a show. I could see it running for season or two.

"Son Of The Endless Night" by John Farris. The pitch: It's like if HBO did True Detective set on the world of The Exorcist... It's Law & Order going after Satan... and putting him on trial... Think Oh God!... but way more demonic.

Charlie Higson's The Enemy series. It was mainly geared towards the "young adult" audience, but I have never been so engrossed in a book series like this one.
A plague hits which turns anyone who reaches their mid/late teens into a zombie like creature. It follows a number of groups of children spread throughout London during the plague.
The problem is that it would be a bitch to adapt (if kept close to the source) - filming in and around the main locations (Buckingham Palace, Tower Of London, War Museum etc) would be a logistical nightmare, on screen kid death (and there is a lot) may turn some audiences off, but most challenging would be adapting 7 books set over only a period of a year or so, with a cast of preteens that can't age on screen.

Anything by Dan Simmons. His novels are long enough to run three seasons. Guillermo Del toro was once attached to Drood, but I think he wanted to turn it into a movie. It would be much better suited for a TV series.
