By that I mean, what if they chose to make a film that completely ignores the events of every other film in the franchise with the sole exception being A New Hope? How much of an uproar do you think there would be if they chose to do that?

I would like to see a movie set in an alternate universe where Anakin chose to save Mace instead of helping Palpatine and falling to the dark side. Anakin, Obi-Wan, Mace, and Yoda then go underground to train new Jedi including Luke and Leia. Things get just as dark anyway though because Palpatine breaks the Sith code out of desperation and begins training an entire army of Sith.

If they did a random sequel to the 1977 movie that ignored Empire and Jedi, people prolly wouldn't like it. That said, I fully expect them to remake/reboot the OT at some point down the road -- possibly as early as 2027.

Wut? This idea sounds so fucking stupid that not even current Lucasfilm would pick up on it. These people are corporate hacks not idiots. Their entire output is based on retreading the narrative groundwork George Lucas provided.
I would be all for a full (not soft) reboot of the sequel timeline though. A show set after Jedi, in which Kylo Ren remains a emo-blowjob and Rey is nothing but a Force fart.

Filmmakers want to ignore a lot of the Halloween squeals because they suck.
Okay to be fair the narrative is also about one killer. Star Wars is universe where you're just limited by your imagination. If you just wanted to have The Adventures of Luke Skywalker than you would need some kind of reboot. But that's not what Disney is doing and there's no need for it.
