I've heard some religious apologists refer to something like that as "science of the gaps" if that's what your refering to. But that's really flimsy reasoning and not really comparable to God of the Gaps at all. Thousands of years people weren't really sure what the sun was and decided to worship it as a God. If people went with your reasoning and decided there was no scientific explanation for the sun, we would still be worshiping a giant ball of gas. Using "science of the gap" as an argument is just willful ignorance and can limit scientific discoveries.

Well, God doesn't explain it either - unless you are willing to accept that animals also have a soul, which is something that (to the best of my knowledge) the big monotheistic religions reject. After all, human consciousness is not fundamentally different from that of some animals - it is just more sophisticated.
