I've read "Flicker" which is weird and brilliant and "Never Eat Lunch" which is the best inside book on Hollywood I've read (70's and 80's period) "Easy Riders, Raging Bulls" by Peter Biskind should definitely be on their too as it's easily top 5. "Goldwynn" by A.Scott Berg should be there and Niven's biographies are great too. Rupert Everett's first book is wonderfully bitchy too.

Haven't read it, but The Day of the Locust is surely the most famous novel set in Hollywood. Surprised they missed it out. I've read Goldwyn and own Lunch. Need to get around to reading it sometime.
