I've been using So Delicious coconut creamer for years, but they just changed the formulation and I hate it. The fat and sodium numbers went up, the coconut doesn't dissolve no matter how much you shake it, and it tastes bad. I threw out the first one thinking it was bad, opened one with a different date, and it's exactly the same.
I usually buy the Trader Joe's version, but it is a knockoff of that one and has been gone during this time due to "quality control issues." I have a feeling, if and when it comes back, it will be this vile stuff.
I want to make one that's thick, healthy, relatively unflavored and unsweetened, has no fresh dairy (though it may be ok), and doesn't require a bunch of soaking of nuts (cue the jokes)
Might try something with unsweetened condensed milk and a healthy starch thickener. I've seen a recipe with arrowroot starch.
Anyone ever made any?

I drink coffee black, so it never occurred to me. But, it's an interesting question. The woman on the site below has recipes for various flavors of creamers -- cinnamon, chocolate, etc.. I was a little vague on the specifics of just plain creamer. www.youtube.com/watch?v=btuVGl3cWdg
