I love cauliflower, and have always just steamed it, and added a bit of butter and s/p. I've heard of mashing them, instead of potatoes. I might try that sometime. I like pizza (a lot), but I don't eat enough of it that it would make a healthier impact on me ... besides, I LOVE to chew in the big crust of regular pizza dough. Chips? I can't imagine them being a substitute for potatoes. There are other greens that I much prefer to kale. I like cauliflower, cooked, raw with cheese sauce or raw in salad.
