Last night was the first time that I've tasted this dish. Half hour in the oven with a little oil and man-o-man. What have I been missing. Cherry tomatoes onion courgettes aubergines basil leaves red pepper I kept some for tonight and been wondering about adding some brocolli, cauliflower and sprouts to this mix and roasting the lot. Any thoughts/advice. I have had a dish like that recently. Courgettes = zucchini Aubergines = eggplant Red pepper = capsicum Zucchinis are forgettable but would be quite edible in that mix Eggplant can be delicious if cooked right Roasted red capsicum is the best. Caulflower would work OK with that, possibly not broccoli though. You could try brussel sprouts too, although I would roast cauli and brussel sprouts separately with garlic or cheese If you meant bean sprouts, NO.
