So Spiderman definitely blipped which means that the kids who stayed and looked older (like the asian guy) presumably continued going to school and advancing in grades. So why would they still be in the same class? They didn't just sit around doing nothing, waiting until they come back to recommence life did they?

The Asian guy wasn't in their class before the blip then he shouldn't be older looking then all of them. He should be the same real age, and was presumably just a toddler before the blip. Maybe I'm misunderstanding how the blip worked. But I thought earth basically kept happening for 5 years and then all of the blipped came back after that but still from 5 years ago (in other words they jumped forward in time without aging). So when spiderman came back, he still needed to start school where he left off. Is this incorrect?

Is this incorrect? its correct. the blip would have fucked things up for people beyond who looks older etc. i am convinced that after 5 years the society would be better off, and most of them moved on, and having so many people come back all off a sudden would fuck things up MASSIVELY - the movie mentions homelessness as a result. thats good, but thats only such a tiny faction - joblessness - divorce/remarriage/ being pronounced dead, my heirs getting my earthly possessions, my younger friends and family members now being older than me, - relationships broken beyond repair, not to mention the damage to earth by having all the people come back. - elections. would it coount if only half of population got to vote? - people who were bliped in jail. would they go back to jail after being resurrected? - tenures. would 5 years count against it? - leasing, mortgages, contracts you have with various providers, imagine all of that and the consequences. I can honestly see a civil war as the Most Likely result of the stupid Resurrection. in some way, Thanos was a the tru hero.

Just because the movie only showed very few of the consequences, it doesn't mean that there weren't any.

Nah, I wouldn't call it a plothole, as the ages and grades are never (to the best of my recollection) explicitly stated. He could have been three years younger and now two years older than everyone else - or he could have been five yours younger and now the same age as everyone else, only appearing to be even older.
We don't know either if the Europe trip was exclusively for students in Peter's grade, or if it was open to other grades. Maybe the Asian kid was now a senior while the others were sophomores.

They stated in the movie that he was a little kid before the blip. So he has aged 5 years since then. They do not say in the movie that he is any older or younger than the rest of the kids in the group on the trip. So there is no reason to assume that he is significantly older than they are. Therefore he was probably 10-12 before the blip and 15-17 now.
If they said he was 21 and didn't explain why he was still in high school that would be a problem but they didn't say he is 21. Therefore the logical assumption is that he is of high school age because he is in high school and they didn't mention any reason to think he's too old to be in high school.
I've never seen a movie about high school kids that didn't have actors who looked too old to be high school.
