.. that you would have wanted to see?! For me, Ridley Scott's I Am Legend with Arnold Schwarzenegger. They had a script, creature designs and Arnie was almost a done deal with Scott but ultimately the budget was too much and both Scott and Arnie were under heavy scrutiny for their bankability (Batman and Robin being the latest failure for Arnie). I think it would have been a good film.

I think I remember that another film about Alexander was rumored with Leonardo DiCaprio in the starring role, but it was cancelled when Oliver Stone's was greenlit.
Also, the proposed Orson Welles Heart of Darkness adaption.

Films that could have been, but ultimately were cancelled that you would have wanted to see?! For me, it's Guillermo del Toro's Hellboy 3. They clearly had ideas of how the trilogy should end, but alas it was not to be. Instead we got the Hellboy (2019) reboot which flopped, deservedly from what I hear.

No Bail for the Judge (c. 1959) starring Audrey Hepburn and Laurence Harvey; directed by Alfred Hitchcock. Also featuring one of the best supporting actors in Hitchcock films, John Williams. While this film was never made, Hepburn would later go on to star in the Hitchcockian Charade, directed by Stanley Donen, which showed off how she had the right style to be a classic Hitchcock heroine.
