Consistent for me is being as good or better than the first season.

Leave it to Beaver. The cast stayed the same, except for a few of the boys' friends; the show never got too goofy or "very special" over the years; as Beaver aged out of his cuteness into gawky adolescence, there was no attempt to bring in some younger kid to keep the cute factor for as long as possible; there were no special guest stars. And Eddie Haskell maintained the same level of smarminess throughout all six seasons.

Probably Mad Men
Seinfeld was close, just a little dip in the latter seasons. I think Curb may have been a little more consistent for me, but it's a much more divisive show.

In terms of quality, for me The Twilight Zone. Whose Line Is It Anyway was consistent for years but has overstayed its welcome. I'm more interested in the fantasy and sci fi series at this point in my life so I can't pretend to be an objective arbiter of quality.

There is only one right answer and it is Breaking Bad. The show was perfection from beginning to end. It got better every season too.
