The Phantom Menace - loved the hype at the time and it's also a really great film.
The Empire Strikes Back - most atmospheric, mysterious, enchanting of them.
Return of the Jedi - great finale

I honestly don't think I've ever seen one all the way through. Maybe as a kid, but I don't remember them. If I watched them today, I'd be seeing them for virtually the first time.
