IMHO it depends on the focus of what you want the first Jedi to be.
If you're going for a wise Jedi my pick is Milo Ventimiglia. If you're going for power my choice is Chris Evans. Bradley Cooper (or maybe Daniel Craig if you could get past his James Bond persona) would strike a nice balance in between.
