Seeing as Endgame wrapped up the story till now. Iron Man, Captain America and Black Widow are dead. Thor and Hulk have been turned into a gag. Hawkeye is probably retired going by the D+ series.
They're lucky they got Spider-Man back.
Are you still as interested in the MCU going forward or have you lost interest?

Yes, because I was a fan of the comics before the films. So I'm just as excited about the new projects coming up as I was for the Infinity Saga.

I'm excited to see what they do with the titles they have announced, but it has dwindled a little, only because it's all so far away - at least compared to the regularity of release with the first three phases.

I hate to admit it but yes... my interest has dwindled a bit. Mostly it's because of how the MCU has been handling their characters.
When the MCU started, they were this small underdog company who's one redeeming quality over other superhero movies was that they cared about their characters and they cared about pleasing their fans. Later on they became a money-making machine, yet they still cared about their characters and they cared about pleasing their fans (for the most part).
Then Captain Marvel came out, and it's the first MCU movie I can think of where the title character was given very little character/personality focus and development. Seemed like the MCU was less concerned about the character and more concerned about just making a movie. But hey, I thought maybe it was just a one-off thing.
But then Endgame came about and I was appalled at the treatment Hulk and Thor got. This is where I seriously started questioning whether the MCU was a money making machine that still respected its characters and wanted to please its fans... or did it become a pure money making machine?
Of course the ends of IM's and Cap's storylines doesn't help either.
I was initially excited for the Eternals, up until I saw that they changed some of the characters and saw their generic-looking costumes. I was initially excited for Thor: Love and Thunder, and I guess this is still the movie that excites me the most, but the news of Portman becoming the new Thor worries me that the original Thor probably won't get the kind of focus in this movie as he deserves.
I guess what I'm really saying is that, majority of my love for the MCU stems from the fact that they seemed to care about their characters and fans more than other superhero studios (like Fox and DC) who seemed to make superhero movies as simple cash grabs. What I saw from Captain Marvel, Endgame and some of their future movie decisions have made me question that.

CM was rushed and we've talked Thor & Hulk's respective Endgame backseats to death at this point, but at the end of the day I'll chalk it up to creative differences between myself and the writers rather than a lack of care for the overall narrative. We'll find out when phase 4 begins.

To be fair, I'm still more excited for MCU movies than I am for any other superhero movies out there (other than WW84).... or any other action adventure movie for that matter. Just that I'm not as excited about them now. There was a time when I could barely wait to see the next MCU movie, especially this last phase, and I'd always be there opening weekend to watch their latest movie. But recently... heck, I was able to wait till Spiderman Far From Home was on Bluray before I watched it. Big mistake though, as I thought that movie was awesome. Still, I no longer twitch with anticipation whenever I hear about their upcoming movies. Probably helps that the upcoming movies aren't exactly ones I was that interested in. Now if they made a Silver Surfer movie or a proper X-men movie, I'll definitely be there opening night.

Pretty much, but they're still the best of their genre. Save for 3 Batman movies (four tops, and not all from the same trilogy), 2 Superman movies (none past 1980) and 2 Spiderman movies (one live action one computer animated), the next best superhero movies are as good or a little better than the MCU's worst. There's an argument for Wonder Woman over Captain America. I'd put 2 of the 4 remaining live action Batmans over some of the MCU part 2's and if you really pressed me, I'd put one of the omitted Spiderman movies over Captain Marvel and Ant-Man. And the Deadpools. I love both Deadpools, and this coming from a guy who's never cared for Ryan Reynolds. Sure do now!
So outside of a small handful of debatable exceptions and a smaller handful of bona fide exceptions, the MCU's way better.
This is also coming from a guy whose favorite characters before all movies were Spiderman, X-Men, Hulk and Batman.

I'd say I'm less interested in the phases and the MCU as a whole. I probably won't see every movie in theaters anymore because I won't be as excited about the connections and I'll likely skip some TV shows.
But there are things I'm excited for like The Eternals, Doctor Strange in the Multiverse of Madness, and the third Spider-Man and Guardians.
Along with a few of the shows like Loki, What If?, Ms. Marvel, and Moon Knight.

Yes, it has dwindled. Endgame was a solid...well, ending for a lot of marvel heroes and stories. It did a great job of opening the door to walking away from the franchise and feeling satisfied.

I for one never felt all in with the MCU as it was beyond my core fav films, which counting Endgame came to 10 total. Of 22(?). So yeah, the Infinity Saga was great, & I still really enjoy revisiting those favs of mine.
I think my interest & fascination will rekindle once the next major macro arc is revealed. As it was with the Infinity Saga, it really took Thanos' reveal in The Avengers to get me truly onboard.

Without knowing what's to come next then there's not going to be the same amount of interest.

I'm only hyped for Thor Love and Thunder and Doctor Strange multiverse of madness. After Endgame it has dwindled a bit I won't be rushing to see every movie now.

It's pretty much the same as it was before the Infinity War + Endgame which were the only MCU movies I saw in theaters.
Still haven't seen Captain Marvel or Spiderman Far from Home though.

It's only dwindled for the blu-rays. I always knew after Endgame I'd be done with the collection.
But I still can't wait for Doctors Strange, Thor, and Guardians sequels.
