Finally watched the movie and when it ended I couldn't help but wonder why the princess didn't give the plans to another ship to deliver? I know she was headed off to pick up Ben but couldn't someone have offered to take the plans to the rebel base?

When would she have a chance to rendezvous with another ship?

The Rebels were just celebrating their victory and about to jump into Hyperspace when Vader (inside the Star Destroyer) came out of nowhere and started blowing them away. If you watch it again, you'll see that none of the ships got away other than Leia's. Vader sent everyone into panic mode (and for good reason).

Except for that one guy. He sent him into the ceiling. Oh he was just giving the ceiling a good scrubbing. It was getting dusty.

I didn't catch that no other ships escaped so I need to watch it again.

No. They attempt to do so but Vader's Star Destroyer appears exactly where they start to take off into Hyperspace. The result is that they either get blown away by the Star Destroyer or crash into the gigantic ship.
