Interesting but I will take something like this any day.

Food trucks are a big deal these days. It's not the slop buckets of the old days, they are often trained chefs that choose a truck over a restaurant. The food is delicious but expensive, at least here, and tends to be less healthy. We can eat in a decent sit down restaurant for the same price. For a young chef there is a lower barrier to entry and you can sell during peak hours and then clean and go home.
