They're supposed to be "room temperature" when we cook them, so why is it we often store them in the fridge?

I refrigerate them because that's what my grocery store does. Anything room temperature is part of the prep - take them out 30 mins prior.

But if you take them out to then cook/bake with them, this can kill off that bacteria-as long as they are cooked to the right temp(145).

Like most of the above posters, yes I refrigerate eggs.
I never thought otherwise autumn.
BUT my grands and my husband's family sold eggs to the store back in the '50's. Those eggs were not refrigerated from chicken to store. They were kept in cool basements but not refrigerated.
You made me think! Lol

But if you take them out to then cook/bake with them, this can kill off that bacteria-as long as they are cooked to the right temp(145). I don't always remember, but this is what I try to do. I also keep them in the fridge and try to remember to take them out about 30-40 minutes before I cook them, and I'm just making scrambled eggs. Problem is that more often than not, I just get a random hankering for eggs, and they're so quick to make, I end up cooking cold eggs.

I also thought,...well, they also baked and cooked a lot more than I do, and for a lot more people, so maybe that had something to do with it. Just a random thought. People also used to can foods in the oven and canned meats and vegetables in water baths rather than using a pressure cooker ! Another egg thing ... do NOT wash them and then store them in the fridge. It removes natural protections. Only time that not using cold eggs seems to matter is when hard boiling them .. and then if you start them in cold water they usually won't break !

Freshly laid eggs are safe to leave unrefrigerated for a few days, not sure how long.
In the 'olden' days when more people were farmers they would have at least a few egg-laying chickens, even if they weren't chicken farmers. People would also cook and bake their own food so you'd use your eggs as you got them or save them for a few days for something bigger. Just like sugar, people would also go to their neighbour to borrow a couple eggs when they found themselves short. Even if you had to buy your own eggs, they'd be from local farms. You'd go to the store and buy a dozen unrefrigerated eggs knowing they were laid in the last day or so and that you'd use them in a few days.
In other words, eggs didn't used to get refrigerated because they were never around long enough to go bad.

Ahhh, that makes sense. I'm getting the feeling my grannies got their eggs from farms. I'm going to stop at a local farm that sells fresh eggs and see if I notice a difference.

My new "thing" is making Thai peanut scrambled eggs. While the eggs are being scrambled, when they're almost ready, I drizzle in, and whip it up into the eggs.
Oh my gosh is it ever so yummy!

I became curious about this, after staying at a very small B&B in London. They only rented out 2 rooms, and all of the guests had breakfast with the hostess at the same time. She had her eggs on the counter in a cute little wire basket. I asked if she ever refrigerated her eggs, and she said that no one does (in the UK).
When "Google" came into being, it occurred to me to check it out.
We've had a few posters on the "Food & Drink" board who have their own chickens, and enjoy farm-fresh eggs every day. I envy that.

It gets to be a feast or famine situation ... too many eggs and then too few and finally stewed chicken for dinner. If you do want your own farm fresh eggs .... Do NOT name your chickens ! and Get chickens that all look alike and have no personalities so you don't know just who is coming to dinner !

They've been processed, washed, sprayed and then packaged, stored and then shipped. Yes, refrigerate them.
The in,y eggs I don't refrigerate are the ones from the poultry farm - talk about fresh!!
