I'd forgotten that tomorrow is flag day. But, I'm going to bake a couple of chicken thighs. Not sure, yet, how I'll prep them ... rub, garlic, BBQ sauce, etc.. And, I'm not sure what I'll have with them.
As for opah, I'm not familiar with it. I looked at a video that compares it to tuna, and the raw cuts look very much like tuna. Let us know how you cooked it, and how you liked it.
