Or at least her character, in one scene. When the Julia Roberts character has her insulin drop at the beauty parlor and her mom talks to her like a baby and not because she is concerned or being maternal. The Shelby character says something about leaving her mom or being able to stand on her own two feet and the mom says "Oh, I'd like to see you just try!"
And then when she tells every person in the room that her daughter can't have children. First of all, that's personal information and it is not the mom's place to go around telling everybody her daughter's very private stuff. Secondly - and this is what really irks me about the mom - if you pay attention to Sally Field in this scene, it really looks like she is getting ready to burst out laughing. I mean it's not even close to subtle. "The doctors say it may not be possible!" I half expected the mother to turn to her daughter and say "You can't have kids! Ha! Ha! Ney! Ney!" or some other ridiculously mean thing.
It is not just me, there is something going on here. And the only thing I can think of is Sally Field herself. I am serious. I imagine Field revels in her perfect warm and loving mother persona and she just plain did not like the idea of a younger woman coming along and usurping her territory. And Julia Roberts was fresh on the scene at that point. I think Field was being a jealous female here and director Herbert Ross didn't notice or wasn't able to direct Field here.
At any rate, I'm not a fan of Sally Fields to begin with. I don't think she's as nice as she pretends to be.

You get too focused on the actors' real life personalities.
I don't don't that.
I am still a big fan of Tom Cruise as an actor, even though I dislike him as a person.

It's hard for me not to do that. Hmmmm... I'm trying to think of an actor or actress that I don't like, yet still think is good on screen. I would say Joan Crawford, whom I adore onscreen, yet would give a double wide berth in real life. And Katharine Hepburn has given a handful of excellent performances and I can say with some confidence I wouldn't be able to take in real life. On the other hand, there are a ton of actors and actresses who I don't think are all that great at acting, but whom I really like a lot, most notably Shelly Hack.

I watched The African Queen recently and I loved Katharine Hepburn in this!!
I'm not sure I could have taken her in real life either, but she does remind me of an elderly lady I knew in Massachusetts years ago who had a stern way of talking (in real life, obviously) but everyone knew she was a sweetheart inside and treated her as such.

I'm not a fan of Sally Field either, but I did like her in Places in the Heart.
I liked the scene where a blind guy is telling her off while she's naked in a bath tub until he goes to pound on the table and hits water.
John Malkovich was really good in that movie, too.

I love Steel Magnolias dirtypillows and I don’t actually mind watching Field, but the scene you describe is typical of her acting technique, as if projecting something that is supposed to be the epitome of motherhood and nurture, but comes across as phony. It is ego acting, wanting to be seen as a pillar of virtue and part of the reason I also enjoy watching SM, is to critique on Field’s performance. She is quite terrible in the hospital scene where she loses her temper. The rest of the ensemble cast really clicks this film together and MacLaine is a hoot as Ouiser. Man, is she ever!!
