Strictly a winter thing for me, but I do love a good pot of chili. Usually happens when I have a slew of extra vegetables that I don't want to go to waste. In they go!

I want cornbread with my chili, but crackers are good too! I often add a spoonful of sour cream to the bowl or a little grated cheese, sometimes both!!

I love chili. It can be very nutritious, and it's a great catch-all for leftovers/last of. In fact, the version I made last night is somewhat typical of how I've been making it lately (the easy version that is), and half of it was just that.
- 1 can chili (pretty much any commercial brand - I used Stagg Country Style) - 1 can S&W Pinto Chili Beans (it's almost vegetarian chili) - 1/2 cup salsa (used Safeway Southwestern Style) - 1/2 cup Holy Trinity Plus (leftover - sauteed onion, bell pepper, celery + garlic and jalapenos) - 1/3 can garbanzo beans (leftover) - 8 "colossal" black olives, sliced (leftover) - 1-1/2 fire-roasted jalapenos (leftover) - freshly-ground black pepper, sriracha sauce, Chinese hot oil, Accent
Hot enough that I was sweating after eating a bowl (with the fan on my face).
What was truly inspired this time though was that I had a bag of Safeway Portobello Mushroom Ravioli in the freezer, so I took out about a dozen, tossed them into a bowl in the sink, added hot tap water - which I changed three times while the chili was slowly heating. Then I poured some chili on top, sprinkled some Parmesan cheese on it, and Viola!

Back in the day when I was in school chili and cinnamon rolls was the main entree often for school hot lunch. Was that an Iowa thing? Or did others here have the same thing.

When we had chili (in Montana), it was typically a bowl of chili, a hard roll with a pat of butter, a banana, milk, and probably a few other things. To this day, I love having my chili with a hard roll, and as strange as this sounds (I don't know anyone else who does this) - to have some slices of banana on top. It's also great with a bit of cheese and sometimes a wee bit of sour cream.

Just working my way trough a vat of chili made with the massive quantities of tomatoes now at various stages of ripening inside the house to avoid the impending early night of frost they keep threatening ! Seems to not matter much whether they ripen on the leafless vine this time of year or on a tray in the living room !
Anyway ...this seasonal version of chili is more like a veggie soup or minestrone than a classic thick chili ...the spices are the same tho' so it's officially called chili !

To me it's all about good chili sauce, sauteed onions, and chunks of tender cooked beef - and no beans. I don't mind chili with beans, but beans do not need to enter my favorite chili preparation at all.
