The tail should be straight in line with the head, and the head should be firm to the touch. When going out to buy live prawns, bring a cooler with ice in it to put them in for the ride home. Once home, refrigerate them until ready to cook. Donβt leave live or recently live prawns for more than a few hours before cooking them or removing the heads. Spot prawns have an enzyme that will permeate into the tail and causes their quality to deteriorate quickly. Youβll know the prawns have started to deteriorate if the head is showing a black colour and is soft or mushy when touched, an unappealing quality the meat will also have. If you need to store the prawns for more than a few hours, you can remove the heads by swiftly turning and pulling them away from the tails. After the heads are removed, the tails should be thoroughly rinsed and, as noted above, kept refrigerated until ready to cook. Spot prawns can be prepared in ways similar to other large shrimp and prawns. I used them in an aromatic, colourful and tasty Cajun-style sheet pan dinner for two.

I prefer spot prawns but shrimp are much easier to acquire up here.
If I had my druthers, however, I'm going crawfish 10 times out of 10. My wife and I couldn't make down to the gulf this year which is a shame. Our local fishmonger does get a shipment or two of crawfish every season and we do a boil outside but it's just not the same. There is a place in Brooklyn that opened up last year that did a weekly crawfish boil on Sundays and they were really good. Haven't been able to go this year, obviously.

Haven't been able to go this year, obviously. ordered spot prawns from santa barbara fish market when i was on the east coast...solid place. haven't had crawfish in a long time!!! man, those boils are tasty.

Have never heard of "spot" prawns and though I've had a ton of both shrimp and prawns, there always seems to be an argument about which is what.

Back in my Tulane days, we used to have huge boils right out on the quad on Friday afternoons. Stunk the whole place up but it was such a great time.

At Jazz Fest two years ago (maybe 3? time has no meaning any longer), I had a fried soft shell crab po boy that was so good, I shudder to think it may have been the best po boy I've ever had. It's crazy, normally I'd scoff at someone for even suggesting that anything at a festival was the best of whatever it is, because it's impossible, but by golly I stand by it. I had one on Friday and it was so good, I needed another one on Saturday to see if I was correct in my assessment. And I was!
