I like the concept. I wonder if I can combine my (healthy) no-crust pumpkin custard with my (healthy) no-bake cheesecake recipe. Not sure how to do a crust though - I don't want to bake the one that goes with the cheesecake, but the pumpkin (+egg) pie-type filling has to be baked. Maybe I could just bake the custard and smoosh 'em together.

It is one of the most decadent desserts one can eat - made with cheese, butter, sour cream, sugar, refined flour, etc. That's what makes it a challenge! My Peanut Butter Cup Cheesecake recipe is just a few tweaks away from being finalized though, but it's far and away the most complicated recipe I've created - using ingredients such as silken tofu, non-fat yogurt, non-fat cottage cheese, PB Fit, oat fiber, etc. I think I can do it.

Been making pumpkin cheesecake, pumpkin shortbread bars, pumpkin donuts, & pumpkin cupcakes for 2 weeks now because customers have been asking for it since beginning of September. I think with everything going on, they wanted something warm & comforting.
