It's actually a mug cake!
You need:
1) A large mug 2) One large egg 3) 1 tbsp melted butter 4) 2 tbsp Swerve brown sugar replacement 5) 3 tbsp almond flour 6) Splash of pumpkin spice extract (I use half a cap) 7) Splash of maple extract (I use half a cap) 8) 1/2 tbsp pumpkin 9) 2 good shakes of pumpkin pie spice
You must:
1) Place egg, melted butter, pumpkin spice extract, and maple extract into mug and stir with fork until egg is beaten 2) Add Swerve brown sugar replacement and stir until thoroughly softened and mixed in 3) Add almond flour, pumpkin, and pumpkin pie spice, and stir until mixed completely. It's okay to have some small lumps. 4) Place into microwave and heat for 60-75 seconds (depending on power of your microwave. I heat mine up for 75 seconds). 5) Either top with keto whipped cream (or don't!) and enjoy!
NOTE:
When I say 'big' for the mug, I mean 'big.' These things should be wide enough to hold more coffee than you could ever hope to drink in a reasonable amount of time. The mugs I use, for example, are 18oz/530mL.
