I love when leftovers come together. Some things are actually better as leftover. Chili, vegetable soup, spaghetti sauce, lasagna. Even pizza if you put a little olive oil in a skillet and heat it up that way.

I love stuffed peppers and also cabbage rolls, both served with mashed potatoes.

Looks delicious. My grandmother and mother lived through the Great Depression so they threw NOTHING away especially leftovers. I try to eat or use anything leftover and my kids don't casually throw away food either. We were just having the conversation that there are so many people who will not eat leftovers. My wife and her family don't like leftovers.

Mom made stuffed peppers all the time, the bell pepper + rice + ground beef in tomato sauce version. I switched to poblano peppers sliced in half, ground meat, chopped onions and pepper tops, no rice, no sauce, topped with cheese. If I use sauce it's homemade enchilada sauce.
