Not only referring to Shinkansen but any comparable high speed train like Eurostar or the ones in France.
I have made many train journeys (and very memorable ones) but never in a bullet or high speed train.

Two years ago I took the Eurostar, round trip, between London and Paris. And, I've gone from Paris to Toulouse.
In the late 90s I went from Nice to Paris on the TGV. That trip actually took much longer than scheduled because of some kind of hazard on the track between Nice and Marseille. We sat still, a lot. But, once we started north to Paris we hit a stride.
Before that trip, I was wondering if the sensation of higher speed, or the visual perception of the landscape, would be much different. But, it really isn't. The biggest difference, to me, was how smooth the ride is. On Amtrak, when they try to make up time, those trains can really rock! The high-speeds that I've been on in France are smoooooooth.

Yes, in Japan, in France and in Italy. I love traveling by train, I wish we had more trains here in Canada. Before air travel became more popular and my small town got working airport, I used to travel by train very frequently. My small town Gaya to Mumbai journey by train takes 40 hours (even today!). Although my frequent route was Gaya to New Delhi (16 hours). Canada seems like a country big enough that train travel can make for interesting journeys although it seems car/plane is your regular means of transport. Bullet train is coming to India in 3 years time. There are also train journeys made in mountains. Darjeeling's famous Queen of the hills toy train is very famous.

The top photo looks like the area of the Dolomites, along the Italian/Austrian border. I was there in '16, but we didn't take the train in that region. Below is a link to a video that I just saw two days ago. I subscribe to the channel, which is devoted to train travel. The gentleman who hosts it is British, and he's very thorough, and I'm not sure everyone will want to see all of it. It is a TVG train from Milan to Paris. He indicates that it was recorded in July of this year ... Covid is playing havoc with the video hosts who do travel channels. It runs about 22 minutes. But, he covers the Milan train station until 2:30, in. He looks at the train, and explains it's history until 3:45 minutes in. At 6:20, the train finally gets moving. I think I only travelled by train in India three times. Once from Mumbai to Gandhidam in Gujarat, and then on a different occasion a round trip from Bangalore to a place called Bellary. If I remember correctly those were all overnight journeys. On the first one (from Mumbai to Gujarat) the train was quite crowded, so it wasn't a very pleasant ride. The other trip was OK. Doesn't compare to Osaka - Tokyo or Milan - Rome, of course.
Here in Canada we have a scenic train ride through the Rocky Mountains that I would love to take some day, but it's very expensive. As for regular passenger travel, it just doesn't make much sense for me. If I want to go to Quebec City or to Ottawa, driving is cheaper, probably faster and more convenient. If I want to go to Toronto, flying might be a bit more expensive (though not by much) but it takes much less time. Also, whatever business I have to do there is never going to be right downtown anyway, so the airport is more convenient than the train station.

It seems you have visited Gujarat, Karnataka and mostly south and western India. My favourite part of India is definitely the Himalayas. The states of Sikkim, Himachal, Uttarakhand and Kashmir. I have only been not to Kashmir. I have also been to Nepal and Bhutan. Tibet remains the one I want to see. Would definitely like to go through that scenic train ride if I visit Canada. Which I hope to do may be in 6 or 7 years time.

I've been to Mumbai, to Chennai, to Pune, to Kolkata and Bangalore, but always for work. I really haven't seen much of the country, other than the downtown area of Mumbai and some temple towns near Chennai - oh, and the former French town of Pondycherry.
I've always wanted to go to Agra to see the Taj Mahal and to Goa, but every time I went to India the work was always so exhausting that at the end of my stay I had no desire to extend it for a few days for sight-seeing - I just wanted to get back home! And now my company doesn't do business in India anymore, so I missed my opportunity. I guess I will have to go on my own time and money at some point.
