Homemade from scratch chicken pot pie with an acceptably flaky gluten-free pastry crust.
I've been baking and cooking GF for over 10 years and have never had a pastry crust turn out right, until now. Yay! No more GF cookie-crumb crusts under everything! Now, I can make savory pies, not just sweet custards and fruit pies on cookie crumbs.

I just kept staring into the fridge, freezer and pantry. Been doing that for a day. At one point, I ate a can of pink salmon. Threw some Brazi-bites in the air fryer. Had a bowl of cereal. Starving right now. Guess I'll eat salad.

I did lamb shanks (2 - one for last night, one for tonight), and made a pot of rice. I was going to have a frozen veggie, but that sounded like too much. I'll probably add some veggie tonight.

Today
Breakfast: garlic roasted brussels sprouts and 3 mushrooms stuffed with panko and dried onions.
Lunch: A 15 ounce charcoal grilled pork loin and char-grilled eggplant. Cooked another one for tomorrow.
Dinner: Half a broiled wild sockeye salmon and handfuls of blueberries. Will have the other half in salad tomorrow.

Quite crispy baked chicken legs last night. Dipped in millet flour, oat milk with flax and chia, then in a shake_and-bake bag of stuff from smoked paprika to panko to parmesan. Remaining stuff put in mushrooms and on eggplant.
Had the last 2 this morning.

Something Mexican-ish, perhaps a version of Nachos Grande or soft tacos (with the surprisingly good Mission Carb Balance tortillas).
I'm going to make some kind of Camarones En Salsa Verde Cremosa (shrimp in a green chile cream sauce) and fancy up a can of refried beans. I have guacamole and the other fixins. {I'm overdue to make a HUGE batch of TJ's World Famous Frijoles Refritos, but it's a bit time-consuming.}
