My preference is to get a pork tenderloin, slice it into half-inch thick cutlets, and fry them in a large electric fry pan with the standard flour, egg wash, bread crumbs technique - with some variations. They're also good deep-fried with Tempura batter.
I might also try air-frying them next time. I have a new Cosori air fryer/toaster oven to replace my Oster (which I really like), but it's not set up yet. Unlike my drawer-type air fryer (which I really don't like), it has racks.

Bake them in the oven covered in applesauce. Add some brown sugar to the applesauce.

I agree with Area51, and Sunshine that a bit of sweet/tart fruit can really perk up pork chops. My Mom used to bake them with a half of an apple on top. She cut and cored the apples, then poked a few holes in the skin with a fork to let a little of the juice seep onto the chops. She placed an apple half on each chop ... skin side down ... and put a bit of brown sugar in the indentation from the coring. If you don't want the fruit to overwhelm the chop, you can eat it "on the side," but the meat will have some of the juice on it. ( Don't ever tell anyone that I said this, but, I also like a thin layer of "Shake 'n Bake," on pork chops. I've done that a couple of times, with the apple, and it's very good. Pork is pretty bland, and needs a little help. Remember, Shhhh. It's our little secret.)

Ranch pork chops, put them in the Crock Pot with a can of cream of chicken soup, and cover them with a whole packet of ranch dip mix, slow cook for 4-6 hours.

Lightly breaded and fried in a pan or broiled in the oven would be my choice. Seasoned and cooked on a grill with sweet 'n' sour or bbq sauce also works well. and applesauce... I'm hungry now. Enjoy

Add a little ice cream to it and you can have a banana split pork chop
