I'm taking my mom to an Irish pub for lunch, hoping my bestie can go so we make a girl's lunch out of it. My mom and I are vegetarians, so potatoes and cabbage in some form, lol. I'd love some bread pudding.

St. Patrick's Day is such a big "holiday" to the Irish and those who claim to be Irish on that day, the church gives a dispensation and one is not required to abstain from meat, fast, nothing

Since I'm originally from the Chicago area, everyone is "Irish" there on St. Pat's Day, I'm making Colcannon, a delicious dish containing mashed potatoes, bacon, cabbage and onions.

I use a recipe from allrecipes, its called Diane's colcannon. I fry the bacon, set it aside but keep the bacon grease in the pan and saute' the onions and cabbage - in the meantime the potatoes are boiling, I mash the potatoes with milk then I mix in the onions, cabbage and crumble the bacon in the whole mess and add butter. I don't have the recipe in front of me so I don't have the measurements. Its very easy to make , it would have to be for me to make it.

I bought a corned beef (2.44 pounds) Friday and ate the whole thing by this morning. Did a huge amount of fat trimming, but it was still a mistake to overindulge, while also having 2 pounds of deli turkey breast. Was quite good! Lots of pepper, garlic, etc.
I'm about to switch to salad for dinner.
No ideas for the 17th. Maybe a potato and a Guinness. FYI it's St. Paddy's Day, for PΓ‘draig.

I bought a smallish brisket, and was going to "corn" it, myself, as an adventure. There are instruction videos online, and I liked the one from America's Test Kitchen, which calls for an easy brining system, that takes 6 days.
The day that I should have started the process was the first day after my initial Covid shot. I didn't have a terrible reaction, but I lost interest in "corning" beef. I still want to try it, later.
I bought a small already corned one. And, I'll go pretty traditional, with potatoes/cabbage.
