I bought a "Deli Style Rye" from Central Market. Couldn't read ingredients.
They start "Water, white starter (organic wheat flour, water)..."
Tastes sourdoughy, but not offensively so. But to me, "deli style" indicates no sourdough.

I'm not aware of bread varieties, other than sourdough, that have a "starter." And, flour and water is how a starter-is-started.
Perhaps, if it isn't very sour, they used it right away, rather than feeding it for a week, to 10 days, allowing it to develop strong flavor.
I've never given any thought to what "deli style," means.
