Trying to recall the very first non-human characters that I encountered reading that seemed the most vivid to me,
Tars Tarkas: The fierce Green Martian warrior from the tribe of Thark -John Carter/ A Princess of Mars.
The Alaspin dragon named Pip from the Flinx and Pip series by Alan Dean Foster.
Greyfax Grimwald: The Circle of Light, Bear, Dwarf, and Otter.
Black Cauldron, Gurgi,
The famous Reepicheep, Prince Caspian's most loyal and bravest knight- The Chronicles of Narnia.
Let's not forget Gollum- who was originally Sméagol, a Stoor Hobbit of the River-folk, that lived near the Gladden Field.

'White Fang' & 'Buck' the 140 pound Saint Bernard and Scotch Shepard mix from 'The Call of the Wild' by Jack London.
'Sea Wolf' also definitely worth the read by Jack London.
