I read "The Outsiders" way back in middle school or so and remember enjoying it, never got around to the movie.

Heart of Darkness. Never saw an adaptation of the story, though I guess you might count Apocalypse Now as being one.

The Hotel New Hampshire. Great book by John Irving, was made into a film in 1984, haven't seen it though.
