1- The three original 1977-1983 films. 2- The Ewok movies. 3- The 1999-2005 prequels. Written and filmed by George Lucas.
Universe Sigma:
1- The three 2015-2019 sequels. 2- The spin-off movies.
Which universe are "The Mandalorian", "Boba Fett" and "Obi-Wan" placed in? I guess #2.

Not sure where you’re getting this, but where would the cartoons fit into this? The Clone Wars cartoons were made back when Lucas still owned the franchise, so are those part of this so-called Prime Universe as well? Come to think of it, didn’t Disney declare that the Genndy Tartakovsky cartoon is non-canon as well?

Yeah, don't remember any indication the Disney flicks are a different universe. This aint Star Trek. One might argue there are two universes defined by the events following RotJ, so basically the ST vs Thrawn trilogy, which you didn't mention.
But if this is just an elaborate way to find new and exciting ways to discount Disney SW while gargling George's balls, it would seem self-explanatory that the Disney shows are "sigma".

I've got more than two.
I don't count the Prequels as the same universe as the OT due to non "great pilot" Anakin, Obi-Wan not "taking it upon himself" to train Anakin, Obi-Wan not knowing about Leia, etc, etc.
I don't count Rogue One as being in the prequels / OT continuity due to the lack of insect guys creating the Death Star, Darth Vader going non OT Tantive IV corridor, plans not being beamed to the Tantive IV, etc.
I don't count the DT as being true OT continuity either due to Luke Skywalker, awful Han Solo, Snoke / Palpatine surviving nonsense, etc.
I don't count Solo as being anything either due to Darth Maul cartoon survival being implemented in a live action production.
I don't count the Mandalorian as being OT canon either due to Luke being the "last hope" being disqualified.
Boba Fett surviving and Luke Skywalker forcing prequel era Jedi nonsense on to baby Yoda, no thanks...
Obi-Wan being easily able to defeat Vader but not doing so, Anakin no longer being a but a learner when they've last met... Again, no thanks.
So I see it as many different "universes" and tales from them. Happy to enjoy most of Star Wars on that basis...
