I think I've had gumbo. The stuff they have here with okra, which to me often has the consistency of snot.
I should probably try to find a recipe that I can tweak for myself and see what it could be like. I've done that with jambalaya.
One I just saw online has 2700 mg salt for a serving.

I never use okra. Don't like the consistency. You don't have to use okra or file' powder, if you have enough roux, which you can get out of a jar, it will be thick enough. Chicken and sausage gumbo is very easy. You can use a rotisserie chicken.
