Not cooking, but ordered Easter dinners from the same food truck lady that we got our Thanksgiving dinners from last time. It's ham, green beans or baked beans, macaroni and cheese, something else that I've forgotten and a choice of dessert. With just the two of us, this makes more sense and the servings are always large enough for leftovers.

Slow roasted lamb shanks, and scalloped potatoes. I always have left-over lamb, and I re-heat it with the left-over potatoes, to create a version of "shepherd's pie," that I think has a bit more flavor.

I see lamb mentioned twice. It must be traditional. I had no idea. Hard to imagine anybody not having ham at Easter.

Generally, in the US, ham beats out lamb, as an Easter tradition. However, lamb is preferred among those with a Mediterranean/Middle Eastern background. That can encompass seasonal or religious considerations. For me, it's simply a food preference. I like ham ... particularly in sandwiches, or incorporated into casseroles/soups. So, it has many options for leftovers. Lamb is my favorite meat. But, it has leftover limitations. That's why I opt for lamb shanks. There isn't as much left over, but some variation of Shepherd's Pie, is a nice second meal. A neighbor always invites me to her Seder, which will happen later in April. A lamb bone is one of the symbols that adorns the table. I save my lamb shank bones for that purpose. We just had a store bought ham, Pillsbury rolls and pre-made Bob Evans refrigerated mashed potatoes.
Boring but I live with a bunch of people with health problems who have difficultly cooking because of it.

We could have gotten by just sharing one dinner! So much leftover....ham, baked beans, green beans, mac and cheese, and potato salad. It was kind of an odd combination, we saved the green beans and potato salad for another meal. Carrot cake and German Chocolate cake. Only ate 1/3 of each of ours, so leftovers there too!

I just remembered that I ordered 1 more lamb shank, for Easter, than I wound up needing. So, I'm going to have an extended Easter dinner, tonight. With the shank, I think I'll just have broccoli. Tomorrow, with the leftovers, I'll do either rice, or potato of some sort.
I might over-order next year, too. It's kind of nice to recall that you have a favorite dinner at your finger-tips.
