... gather two of every animal.
Why did he disobey, and leave dinosaurs behind?
Was it because some were a bit bitey? Or because he disobeyed God's instructions?

There were actually three or four times more kinds of animals back then, Noah gave up after getting about 1/3 of them on the Ark.
God dissolved the bones of the animals who went extinct.

Where does it say that he left dinosaurs behind? It says he brought two of every animal. It doesn't have to name every animal there was because "every" means they were all there. In fact, in the Book of Job (which chronologically takes place after Noah's Ark), there's actually a description of some creatures that resemble dinosaurs, and if they are dinosaurs than it means that there were dinosaurs on the ark. It's simple. I don't know where you got the idea that there were no dinosaurs on the ark. You are adding something to the text that isn't there.

There were dinosaurs on the Ark 🐊 Man alive, whoever had the job of cleaning out the T Rex stable must have drawn the short straw 😨

This is just speculation, but I'm pretty sure that if that was actually what happened, that the Bible would have used the plural ("arks") instead of the singular ("ark").

Maybe, like the unicorns, the dinosaurs were too busy playing in the rain.
